The aim of project ir to acquire intellectual property rights and economic advantages, by developing a new food smoking technology based on recent scientific research that will consist of an automated smoking device and specially designed fuel which, utilizing a complex process, will ensure that throughout the food product smoking process, the smoke of the naturally burnt wood fuel will be produced and controlled in such a way that the smoked products will meet EC criteria in regard to the required benzpyrene concentration, while at the same time maintaining the product’s nutritional value and organoleptic properties.
